Scamorza is a fresh, semi-soft cow’s milk cheese. It is pear-shaped due to a production method called “strangling the cheese”, where the fresh round cheese is hung to dry by means of a string tied a third of the way from the top.
Smoked with the traditional essence of beech that brings out a wonderful smoky flavor. Scamorza is made in the same way as mozzarella but is a drier, firmer cheese. Scamorza can be substituted for mozzarella in most dishes, but the resulting taste will be much stronger and more dominant. It is reputed to melt butter in baking. Using the smoked variety (scamorza affumicata) adds a nice background flavor in the replacement of mozzarella.
