It all started in 1818 when Nicolas François Billecart and Elisabeth Salmon were married, marking the creation of their Champagne House. This has been a family story since the beginning with Louis Salmon, brother of Elisabeth and a passionate oenologist, getting involved in the creation of the wines. Thus, over 7 generations, each family member has endeavored to continue the family tradition, staying faithful to the same motto: "Give priority to quality, strive for excellence".

Clos Saint Hilaire is an exceptional cuvée. It bears the name of the patron saint of the village of Mareuil-sur-Aÿ where the Billecart-Salmon house is located. It is champagne from a one-hectare clos located just behind the Billecart-Salmon house. Pinots Noirs have been planted and pampered there since 1964.

Vinified in oak barrels, it is exceptional champagne in several ways. Monocépage, monocru, without dosage, it is a cuvée that develops an exceptional purity.

The color is a beautiful golden yellow with golden reflections. The effervescence is fine and delicate.

The nose is very elegant and complex. Aromas of biscuits, toasted fresh hazelnuts and white pepper mix with intense notes of nuts and sweet spices.

Wide and structured, the palate fascinates with its greedy aromas of citrus fruits and pears in syrup, harmoniously combined with notes of candied lemon peel, mandarin pulp and panettone. This aromatic richness extends throughout the tasting to a mineral and chalky finish.
