It all started here in 1818 when Nicolas François Billecart and Elisabeth Salmon were married, marking the creation of their Champagne House. This has been a family story since the beginning with Louis Salmon, brother of Elisabeth and a passionate oenologist, getting involved in the creation of the wines. Thus, over 7 generations, each family member has endeavored to continue the family tradition, staying faithful to the same motto: "Give priority to quality, strive for excellence".

This bottle pays tribute to Louis, brother of Elisabeth Salmon, an oenology enthusiast very involved in the production of wines, since the creation of the property. The Cuvée Louis Salmon Blanc de Blancs 2009 reflects the expression of the best plots of Grands Crus from the Côte des Blancs: Cramant and Chouilly for finesse, Avize for power and Mesnil-sur-Oger for structure and longevity.

The dress has a pale gold color with shades of yellow and green, with remarkable brilliance.

Elegant and complex, the nose opens with fragrances of hazelnut and citrus pulp (mandarin). As it aerates, pure and crystalline aromas are revealed (raw butter and fresh honey) imparted by the chalky soil of the house's terroirs.

Precise, the mouth seduces with its creamy touch and its chiseled finesse. The balance and power of the palate combine with a rich aromatic palette (almond paste, flaky brioche, white fruits and white pepper). Beautifully persistent, the finish exudes aromas of fresh mango and cardamom.
