This Balsamic Vinegar of Modena IGP is created by aging it in a series of barrels called a “batteria”, which are often made from different woods oak, ash, acacia, chestnut, cherry, mulberry and juniper and gradually decrease in size. The grapes used are from the typical varieties of Trebbiano and Lambrusco. The “Travasi” number refers to the number of times it has been “racked” from one barrel to the next, which occurs annually. Therefore, the higher the number, the longer it has been aged and the greater the wood influence, resulting in a thicker, richer and more complex vinegar.
