Extending Rully towards the south, the Mercurey vineyard is located on marl-limestone soils resulting from geological formations of the Upper and Middle Jurassic, with a dominance of the latter, which pleases the Pinot noir grape variety which grows here on stony soils. from layers of hard limestone, red wines highly prized for their complexity and their ability to age harmoniously.
Roasted pork has adopted it because of its aromatic richness, as have simmered poultry. Exotic dishes also earn him compliments. On the cheese board, it is suitable for both soft cheeses and mature cheeses.
