The Carbonnode was born from the contraction of (fermentation) Carbonique and (Climat) “La Bonnode”. It is therefore a unique cuvée of Chardonnay grapes vinified in whole bunches, like reds. Thus, after a 9-day maceration in the absence of air, the grapes were pressed and then the juice finished fermenting in a room (228 liters). With its slightly orange hue, its zesty and open nose, it will have everything to seduce you by breaking established codes.
The mouth is both textured and very greedy at the start, with flavors of stewed white fruits, but it also knows how to be traceable and dynamic.
A perfectly integrated tangy dimension prolongs the finish which develops accents of lime, white pepper and coriander.
