The house of Pascal Jolivet is one of the youngest and most dynamic in the Loire Valley. Founded in 1985, this specialist in the wines of Sancerre and Pouilly-Fume has very quickly gained a leading position with the Michelin-starred restaurants of France. Pascal owns an estate of more than 40 acres evenly divided between two appellations.
Each grape is sorted during the harvest; the work is by gravity to respect the natural flow of the juice within the vinification process. A light pressing is done to preserve the integrity of the fruit. Terroirs are blended: 50% limestone, 30% limestone clay and 20% flint.
Vibrant yellow color with restrained aromas of citrus, apple and flint. It is precise and layered with clean, driving acidity, elegance and finesse.
