Produced in the cellars of the former Saint-Nicaise Abbey(13th century) in Reims, the Comtes de Champagne Blanc de Blancs cuvée is made entirely from Chardonnays from only the best vines in the prestigious Côte des Blancs. Only after slow and patient aging for almost 10 years in the Saint-Nicaise chalk pits does this cuvée of exceptional quality come out into the light.

The Cuvée Comtes de Champagne Blanc de Blancs 2007 seduced at first glance by the elegance of its golden dress sporting brilliant green reflections while the precision of the cord enhances the fineness and the persistence of the bubbles. The purity of the expression of the fruit exuding the generosity of white-fleshed fruits and citrus scents, the delicacy of floral notes, saline minerality evolving on subtly smoked notes, the aromatic palette plays the score of refinement and complexity. 

On the palate, the mouth is seduced by the vivacity of the attack which unfolds on tasty lemony notes in a perfect tension-acidity balance. The development continues on a nice density, offering a greedy and ample matter without ever burdening the palate. 

The mineral freshness that accompanies the whole tasting stretches to the length of a superb finale, subtle combination of acidity and roundness on notes reminiscent of the greed of salted butter. An exceptional Champagne for an unforgettable memory.
