2007 Taittinger Comtes de Champagne Blanc de Blancs Mathusalem Champagne

St Barth’s Wine

The Mathusalem contains 6 liters of champagne,
the equivalent of 8 bottles of 750ml

Produced in the cellars of the former Saint-Nicaise Abbey(13th century) in Reims, the Comtes de Champagne Blanc de Blancs cuvée is made entirely from Chardonnays from only the best vines in the prestigious Côte des Blancs. Only after slow and patient aging for almost 10 years in the Saint-Nicaise chalk pits does this cuvée of exceptional quality come out into the light.

Visual: a beautiful, very pale yellow color, with small, fine and light bubbles which wriggle and rise to the top of the glass to form, ultimately, a delicate string of foam.

On the Nose: first fresh and delicate fruity nose approaching aromas of citrus fruits such as mandarin; nose that changes to ripe and pastry fruit characters, more mature and more powerful, such as raisins and other candied fruits.

On the Palate: lively and smooth attack; soupy mid-palate, fleshy, with notes of grapefruit; fine long finish with notes of pastry spices such as licorice.

To sum up, it is a Champagne that oscillates perfectly between maturity and finesse. Its aromatic power is felt as soon as the bottle is opened, and kept in reserve for the rest of the tasting.
