Dom Pierre Perignon set out his vision to "create the best wine in the world" when he became Cellar Master at the sacred Abbey of Hautvillers in 1668. Over 40 years of dedication to this mission led to him being seen by many as the 'father of champagne', due to his visionary spirit and exceptional daring approach to the winemaking process - in which he effectively laid down the fundamental rules in the method champenoise. A favoured wine of the Sun King Louis XIV, Dom Perignon himself compared his wine to "drinking stars".
The Champagne has undergone additional ageing on its lees (12 years in total) with a further two years resting post-disgorgement in the bottle. This additional ageing in the cellar allows the Champagne to develop additional complex toasty notes along with an extra degree of richness. The first plenitude spans between seven to eight years after the vintage, which is when Dom Pérignon Vintage is released, while the second one arrives between 12 and 15 years – which is now called Plénitude P2.
Complex, broad and multi-faceted on the nose, this astonishing Champagne displays notes of brioche, honey, mineral, dried fruit and white blossom. Powerful and rich on the palate, intense and focused savoury flavours are set against a seamless procession of bubbles and a tight structure.
