At the beginning of the 20th century, the Champagne vineyards were destroyed by phylloxera. Everything must be replanted with rootstocks from American plants, to resist the devastating insect. Everything, with the exception of two Bollinger plots classified Grand Cru: "Les Chaudes Terres" and "Le Clos St Jacques", in Aÿ. Two plots cultivated in the old way, in crowds, according to the provignage method, worked manually and sometimes even with the help of a draft horse. Bollinger Vieilles Vignes Françaises is a symbol, bearer of a memory that has almost disappeared: a heritage memory, extraordinary and moving.
This 2012 vintage is a 100% Grand Cru Pinot Noir, the grapes of which were harvested on September 13, 2012. The fermentation is entirely carried out in barrels, then the bottles are aged in the cellar. This exceptional vintage was produced in 2193 numbered bottles,
To the eye, the wine takes on an intense golden yellow color.
On the nose, we discover a very rich and complex aromatic palette with roasted aromas, combined with ginger, almonds and hazelnuts. Notes of candied pear, cooked apricots and a subtle touch of dark chocolate complete this palette. Gingerbread finishes this delicious nose after opening.
On the palate, the attack is round and powerful. The mid-palate reveals white-fleshed fruits and yellow fruits, complemented by toasted aromas. The candied lemon zest and ginger bring a lovely freshness to this generous whole. The tasting ends at a nice length with a suave finish.
